Linda, I just read your review of this recipe. You mentioned you might leave out the cream of tartar. I think the cream of tartar is being added with the baking soda to make baking powder, at least that is my understanding of what baking powder is. I think the amount of leavening will be disappointing if you take it out as there are no acidic ingredients in the recipe. However, you could probably switch it out for baking powder.
By the way, I love your recipes. You are a great resource for the low carb community.
After tasting them again later, I'm pretty sure that there is too much Splenda in them. Too much can make things taste bitter. My husband like them but I will cut back on the sweetener next time.
I made this and decided to dress it up after baking with a little sweetened cream cheese and a couple of strawberries finely chopped. Very yummy! Thank you for your recipes. I have most of them printed out and in a special notebook.
