Hurricane Harvey

We are waiting out hurricane Harvey. We live on the north side of Houston so the weather isn't as bad here as it is down south. The heavy rain is due to start here tomorrow and will get worse on Sunday. I will try to post an update each day as long as the power stays on and we don't get flooded. It has never flooded at our house in all the time we've lived in the Houston area so hopefully we won't this time.

Chicken and "Rice"

CHICKEN & "RICE"


I tried something on a whim today and it turned out very well. I was already planning to make roasted chicken thighs for dinner and I found a cauliflower marked down to 99-cents at Kroger. I ran the cauliflower through the shredding disk in my food processor to make "rice". I spread the cauliflower and a chopped onion over the bottom of a foil-lined baking sheet, seasoned it and drizzled it with a little oil. I'm not sure if the oil was necessary but I thought it might keep the cauliflower from burning before the chicken had a chance to release some of its juices. Next I arranged the chicken thighs on top of the cauliflower. I had already seasoned the bottoms of the chicken pieces and now I seasoned the tops. I baked it at 425ยบ for about 50 minutes until the chicken was done. I wasn't sure how long the cauliflower would take to cook but it came out perfect in that amount of time and it was flavored very nicely by the chicken drippings. My husband liked it as much as I did.

Great bargain on a kitchen scale


Whenever I shop at Kroger, I check out the clearance bins for good deals. I got a super deal on a Salter bamboo digital kitchen scale today. The original price was $29.99 and it was marked down to $5.00! Although I already have another Salter scale, I've had it quite a few years and it has always been a little hard to read. The digital display has black text on a dark gray background. Also, if I set a plate on the scale, it covers the display which makes it even more difficult to read. The new scale has a very large weighing surface and the display is huge and super easy to read. When I got home from the store, I looked up the scale on Amazon and was disappointed to see that it got very bad reviews. However, my husband tested it with jewelers weights and he said that it's very accurate. Hopefully I'll have better luck with mine than those people who wrote the bad reviews.

I've used the heck out of it and it still works fine but I think the new scale will be even nicer to use.

Recipe Review - Best Keto Bread


Yesterday I came across this bread recipe and video on the Keto Connect website HERE. I like that it doesn't call for any weird specialty ingredients and I had everything on hand to make a loaf today. I did have a couple of concerns though. I'm not keen on low carb breads that taste really eggy, especially when toasted. I don't like that burnt egg flavor at all. My other concern was the fact that the recipe calls for three teaspoons of baking powder. That seemed like an awful lot to me and I know that baking powder can give baked goods a bitter after taste sometimes. I looked through a few of my recipes to see how much baking powder they called for and made the decision to cut back the amount of baking powder from three teaspoons to just one teaspoon. I'm happy to report that it didn't need more than one teaspoon for it to raise properly. My loaf looks pretty much like the one in the video.


I didn't make my batter in a food processor because I'd rather wash a couple of beaters and a bowl. I also thought I'd deflate the eggs whites less by folding them in rather than processing them.


I got 22 thin slices from my loaf but I think I might slice it even thinner next time. It took a little too long to toast it and the crust started to burn before the center got toasted well enough. I got better browning by making a grilled cheese sandwich but the untoasted part of the bread was a little too soft and spongy so I think it would have been better had it been thinner. Another reason to slice it thinner is because the bread is super filling. The slices may look small compared to commercial bread but they're at least twice as filling.


This is a very nice, neutral flavored bread and it doesn't taste too eggy even though it has six eggs in it. It also tasted pretty good toasted except for the black bits on the crust.
