I want to mention something that I've been doing whenever I make roast chicken and my Sausage-Mushroom Dressing lately. After I've roasted the chicken, I pour all of the pan juices into the baked dressing and mix them in. That really boosts the flavor just like putting bread stuffing inside of a turkey or chicken adds tons of flavor to the stuffing.

I also came up with another idea when I roasted some chicken thighs today. I like to remove the bones before roasting them because it's easier to remove them when the chicken is raw. It also makes the chicken easier to eat without having to mess with bones. So this time I had the crazy idea to throw the bones that I'd removed on the pan along with the chicken thighs and roast them together. I froze the bones so that I can use them to make broth another day. The broth will taste so much better than when made from raw bones.

  1. I noticed that Mon-Sat meals are not used as leftovers. Will you use the leftovers for your Sunday meal? Or will you freeze the leftovers.

    1. We do eat the leftovers over the next few days after I make something. It's a little hard to judge how long a dish will last so I just plug in "Leftovers" on the menu on days when I'm not cooking something fresh. I do freeze leftovers occasionally but only when there's too much too eat within two or three days or if we've still got a lot of other things left over.

      To answer your other question, we eat whatever we like for any meal of the day. So, the leftovers from the day before might be eaten for lunch or they might be eaten for supper or even for breakfast. The same is true of anything that I cook fresh on any given day. I often do my cooking for the day early in the morning and we just reheat the food later whenever we're ready to eat it.

  2. Oops. One more question. Do you eat the casseroles/quiche for lunch and dinner? Maybe that is why you don't have leftovers? Just noticed that. :-)
