Congrats on staying on budget, Linda! Regarding the chicken you're buying, I can't read the label but am wondering if you've purchased any that is "enhanced with broth- up to 15%", etc? The broth injected chicken is prevalent around here, and cheaper than one that isn't. I'm having a hard time cooking with it. It seems to release all the "broth" or juices when cooked, and leaves the surrounding sauce very watery. It made a huge mess of the Chicken Cordon Bleu recipe. Are you purchasing the "enhanced with broth" chicken, and if so how are you dealing with this problem?

When I buy my chicken from Kroger, I'm pretty sure that it is the "enhanced" kind. If I buy it from Food Town, it's just chicken. On my budget, I can't afford to be choosy and so far I haven't had a problem with it. Maybe that's because I usually just buy boneless thighs at Kroger and they work fine for the recipes that I use them for. I usually get breasts or tenders from Food Town and I use tenders for the Cordon Bleu Casserole.
