Taco Pie Update

The other day I decided to give my Taco Pie recipe another try using some green chile salsa that I got marked down a couple of weeks ago. I wasn't all that excited about the recipe the first time I made it but this one came out very good. Last time I had a problem with the pie falling apart but I think that the American cheese was the culprit. I used Monterey Jack this time and it held together just fine. The green chile salsa gave it a very nice flavor. It also helped that I made sure to season the meat very well this time.

  1. Oooh! I'm going to add that to my list of meals to make once it becomes oven season again. With no A/C I don't turn my oven on until closer to the first frost. Thanks for updating about it. -Dawn

    1. What state do you live in, Dawn? I couldn't live in Texas without air conditioning in the house. My husband's car hasn't had working A/C in years and I refuse to ride in it unless it's cold outside. We can't afford to have it fixed and thankfully mine works despite the fact that my car is 21 years old. His car is a couple years newer than mine but old enough that we can't justify the expense to fix it. It would cost over a thousand dollars to fix his car's A/C and the car isn't worth that much.

  2. I am in OH. We aren't as hot as you all get and stay, but there are usually a few stretches in the summer where the humidity and heat are so high it gets pretty uncomfortable. I understand about the cars, we don't have AC in the cars, either. The van is 15 years old and the car 12. I mean we could sink the money into them, but I'd rather not. We just make do. -Dawn

    1. Living on a budget is all about making do as much as possible and setting priorities. I can live without a fancy car or a fashionable wardrobe but I have to have the internet and a decent computer. My computer is getting old, as far as that goes, but it does what I need it to do and it runs fast enough. Although computers are getting faster and faster, the difference between the speed of mine vs. newer ones isn't that great compared to how they were back when we got our first computer in 1996 vs. when I bought this computer back in 2007. I think they've reached a point where extra speed isn't really that noticeable anymore. Our first computer had a 1.3 gigabyte hard drive, 16 MB of RAM and we were on dial-up. I've got folders on my computer now that have more in them than would fit on that first hard drive. I might even have files that are at least that big. Anyway, I see no reason to update my computer, just because it doesn't have the fastest processor, etc., as long as it continues to meet my needs.
