  1. Hi Linda, what sort of peanut butter do you buy? It looks like standard creamy in the photo. Do you have issues eating that kind? My husband and I buy lower-carb "natural" sugar-free types, but I still prefer the "hydrogenated" texture of regular pb.

    1. It's regular old peanut butter, Erica. I buy it for my husband. He eats peanut butter on toast every day. The only time I use any is when I make Chicken with Peanut Curry Sauce. The carbs per serving are the same as for the natural PB so I don't worry about the bit of sugar since I don't eat it very often and only eat a small amount when I do.

Speaking of peanut butter, I made your Thai Chicken Peanut Curry Last night (used green beans instead of broccoli, added red bell pepper and jalapeƱo, and served over cauliflower rice) and it was fantastic! My husband, who typically isn't crazy about more exotic fare, raved about it. Thanks so much for your recipe site! It's been a source of good ideas and enjoyable foods on which I've relied for years.
